Cauliflower BBQ Chicken Pizza

I have recently gone gluten free - so that means lots of substitutions and healthier meals. I have been eyeing this pizza crust for a while but I was too scared to make it and didn’t know what I wanted?? Well, my favorite kind of pizza is a BBQ Chicken Pizza (preferably drizzled with ranch…. but I am trying to be healthy). I casually made this one night just using simple ingredients, and I am so glad I did! IT WAS SO GOOD. I actually made two of them - one for me, one for Tom. The crusts are fairly tiny - so pending on how many people you need to feed, you may need a few. This pizza can also be made on a normal crust from the grocery store! Get creative with how much cheese or chicken you would like. I am weird and I squeeze some lime on top at the end… you don’t have to, but I recommend it! You can also drizzle ranch on top. Makes it yummy. Enjoy my fav healthy pizza and grab yourself a glass of wine!!!!

Ingredients (Serves 1… Maybe 2)

  • 1 frozen cauliflower pizza crust from Trader Joe’s (or make it from scratch)

  • 1/4 cup BBQ sauce

  • 3 tbsp diced (or chopped) red onion

  • 1 cup shredded mozzarella

  • 1 cup shredded cheddar (or gouda)

  • 1 cup diced cooked grilled chicken

  • 2 tbsp cilantro

  • Fresh lime juice (optional)

Directions

  • Before making the pizza I followed the directions on the pizza crust. Preheat the oven, bake the crust (make sure to flip it half way). Keep the oven on the same temperature when putting it back in with the pizza ingredients.

  • Next, add the BBQ sauce on top of the crust. Mix it around with a spoon - and leave about 1 inch free near the edge (so it doesn’t spill over).

  • Add the chicken + onions. Sprinkle the cheese on top, doesn’t matter which order - just mix it together.

  • Bake it for about 10 minutes, maybe less/maybe more. Make sure to watch it. It all depends on your oven, what pan you use, how much you cooked the crust before hand, etc. Once it starts browning and looking crispy, it is done.

  • When finished, take it out and sprinkle the cilantro on top. Then squeeze some lime on top (optional). I put lime on everything.

  • Enjoy!
