My Famous Banana Bread

I do not remember when I decided to start making banana bread as a kid - but it’s now become my “thing”. Family and friends always save bananas for me in their fridge so that I can make them banana bread when I come visit. This is why it’s called my “famous” banana bread LOL. I loved baking as a kid, I baked something every weekend. And I found an old cookbook that had banana bread and I decided to make it - I’ve tweaked it along the years to perfect the best banana bread. I added butter, more bananas, chocolate chips, etc. I get a text about once a month asking me how to make banana bread! I figured it was time to post my recipe on the blog. This recipe is SO easy, and you probably have all the ingredients already in your house. Let me know if you make it!

Ingredients

  • 3 (very) ripe bananas

  • 2 cups of flour

  • 2 eggs

  • 1 stick of unsalted butter

  • 3/4 cup sugar

  • 1 tsp baking soda

  • 1 tsp salt

  • (Optional) 1/2 cup chocolate chips

  • (Optional) 1/2 walnuts - I do not like walnuts so I don’t add these, but some people love it!


Tips

  • Wait until your bananas are VERY ripe and brown, then put them in the freezer. Once you have collected 3, let them thaw on the counter for 1-2 hours. This helps bring out the best flavor in the bread rather than using fresh bananas.

  • Let the stick of butter soften to room temperature.

  • When the batter is in the pan and ready to cook, slice a banana down the side into 2 thin pieces and press it into the dough. Then sprinkle white sugar on top - it gives it a yummy crunch coating.

  • This recipe is specifically for using a bread pan - for different pans you will have to alter the time it cooks.


Directions

  1. Preheat the oven to 350°.

  2. Always mix the wet ingredients first! Beat the eggs, bananas & sugar. Add the butter.

  3. Slowly add in the flour, baking soda, and salt.

  4. Mix until there are no clumps and it looks blended.

  5. Fold in the chocolate chips - don’t beat them in!

  6. Spray a bread pan with oil or butter, and add the batter.

  7. Optional: add the fresh banana & sugar garnish on top (mentioned above in “tips”.

  8. Baked for 40-50 minutes - check it with a butter knife a few times.

  9. Enjoy!
